SHETLAND STANDING TOGETHER
Reestit mutton around 250-300 grms
2 medium onions chopped
3 carrots diced
1 Medium sized neep (swede) diced
1.5 kg potato peeled and diced to the size you want
Salt and pepper
Put the reestit mutton in a good sized soup pan with about 400 grms of potato, cover with water.
Bring to the boil and let this simmer for about 1 1/2 hours.
Add the rest of the vegetables
Make sure to only just cover this with water and bring to the boil.
Remove the reestit mutton and let it cool. When cool enough trim off the meat and chop before reintroducing to the soup.
Once the potatoes are soft the soup is ready. Season to taste
Freezes very well.
