Smoked Haddock Chowder



Serves 6


50 grms butter

2 medium onions chopped

1 leek diced and washed thoroughly

1 kg potato small diced keep trimmings

350 grms smoked haddock cut into small pieces

2 fish or vegetable stock cubes

Cold water

Handful chopped parsley

Salt and pepper


Melt the butter with a little cold water and add the onions, 1/3 of the chopped leek, the potato trimmings and a handful of the diced potato. Let this sweat and keep stirring until the potato is softer probably 10-15 minutes, adding a little more water if necessary.

Next add about 50 grms of the smoked haddock (mostly the thinner bits),the rest of the leek and the remaining potato to the pot and just cover this with cold water. Bring to the boil gently and add the stock cubes.

When potato still has a little bite to it give it a little blitz with a hand blender or whiz up about 1/3 in a food processor and return it to the pot.

Add the remaining smoked haddock and the chopped parsley.

Let this cook for 10 minutes before seasoning.
