Chicken and Rice Soup



Hi aye everybody thought I’d give you a recipe for CHICKEN AND RICE SOUP I made yesterday using the brucks o a roast chicken


I roasted a chicken, kept the breasts and legs for another meal and used the rest (whole carcass) in this soup. You could just use 2 uncooked chicken breasts if you like.


Easy serves 6-8


Chicken (see above)


2 small onions chopped

1 teaspoon garlic purée or 2 fresh cloves chopped

1 small cup cup frozen peas

Half a small cup long grain rice or jasmine rice (uncooked)

2 carrots small diced

1 small tin sweetcorn

2 chicken stock cubes

1 level teaspoon dried or some chopped fresh parsley

Salt and fresh ground black pepper


Put the chicken (bones and all) or breasts in a pan and cover with cold water. Bring to the boil and cook for 10 minutes (25 minutes if using breasts).

Remove the chicken and set aside to cool.

Add all the other ingredients (except the parsley)to the pan and cook this stirring occasionally until rice and vegetables are cooked, around 15-20 minutes, you may need to add a little more water.

Remove the chicken from the bone or dice your chicken breasts and return this to the pan with the parsley cook for a further 5 minutes then Season and serve.
